AJ's Commissary Kitchen Marks a New Day for Fresno Mobile Food Vendors

Alex Cervantes’ dream of helping mobile food vendors, caterers, and the Chinatown Fresno community is now a reality.

On Tuesday, AJ’s Commissary Kitchen at 1323 Kern St. offered a preview of what will be available next week.

”As a business owner, it’s important for me and my community in Chinatown to have growth here,” says Cervantes, who is the longtime owner of Bakery Vista Hermosa and AJ’s Carniceria Restaurant, which are next door to the kitchen commissary.

Cervantes didn’t pull off this project on his own as he received help from the Fresno Area Hispanic Foundation, the city of Fresno, and the Fresno County Health Department.

When it opens, the kitchen will provide opportunities for mobile food vendors, pop-up vendors, and catering chefs.

All will have space to prepare and package their food products while meeting health compliance regulations. In addition, vendors will be able to store their food carts there.

“The opening of AJ’s Commissary Kitchen will bring many opportunities to our small businesses, especially the underserved mobile food vendors that have been overlooked for so long,” the Fresno Area Hispanic Foundation said in a news release.

“(We) and (our) partners are excited to continue amplifying their voices and bring forth the resources they need to be successful in their business.”
